It’s the peak of summer; steamy weather, barbeques and swimming. Food is an essential part of summer activities, but why pack on the pounds when you can get tons of flavor without the calories from these two side recipes below?
Black Bean and Corn Salsa
Serves 4-6
1 8oz can of black beans, rinsed
1 small bag of frozen yellow corn, thawed
3 plum tomatoes, diced
¼ large white onion, diced
½ red bell pepper, cored and diced
juice of 1 lime
½ tsp cumin
black pepper and salt, to taste
cilantro, to taste (optional)
Mix all of the ingredients in a bowl and serve with tortilla chips. This salsa can be served hot or cold. Great alone, with chips or in tortilla shells.
Simple Pasta Salad
Serves 4
1 8oz box whole grain rotini pasta
3 large tomatoes, wedged
1 large cucumber, chopped
4oz black olives, drained, rinsed and sliced
2oz shredded Parmesan cheese
¾ cup fat free or light Italian dressing
crushed black pepper and salt, to taste
Cook pasta as directed. Mix all ingredients in a bowl adding more dressing as needed. Serve chilled.
