Eva’s Sweet Barbequed Beefless Subs
Depending on how long you’ve been a vegetarian it can be easy or difficult creating new recipes that are delicious and quick. Gardein has recently created new soy items, similar to Morning Star and Boca, which can be found in the freezer section. One of my favorites is their beefless tips. Great by themselves or in a complete meal, they cook quickly and are almost irresistible.
What you’ll need:
1/2 Package of Gardein Beefless Tips (depends on amount of people being served)
A whole roasted red pepper, thinly sliced
1/4 sweet onion, sliced
Barbeque Sauce
Extra Virgin Olive Oil
Pepper, salt, garlic and onion powder, to taste
Wheat French roll
Shredded Mozzarella or Italian blend cheese
Sautee roasted red peppers and onions in olive oil until onions become see through. Add Gardein beefless tips, following cooking time on back of bag instructions and add pepper, salt, garlic and onion powder. Add barbeque sauce, as much or as little as you like, and cover and cook for 5-10 minutes. The olive oil will help keep the sauce from drying out or becoming sticky. Scoop concoction into roll, top with shredded cheese and enjoy!
