With the weather warming up (or attempting to) incorporating more fresh food into your diet is only natural. Caprese sandwiches are a simple way to get a quick, fresh and fulfilling meal without all of the fuss. This oversize sandwich can be prepared in a plethora of ways using different ingredients such as meats and veggies. Check out our classic caprese sandwich recipe below!
Ingredients:
1 Beefy tomato, sliced
Spinach
Whole low-fat mozzarella log, thinly sliced
Pesto, homemade or store bought
Thick bread, used a half loaf of french bread
Olive Oil
Pepper, to taste
Slice the bread in half and scoop or pull out the middle (especially important for breads with a fluffy middle). Spread pesto on both slices, then top with spinach and sliced mozzarella and tomato. Drizzle with extra virgin olive oil and pepper to taste. Pop in the oven under the broiler or high heat (450°-500°) for 10-15 minutes or until bread is golden brown and cheese is melted. Join the two halves, cut, plate and enjoy!
