A hearty, savory quiche is a great idea for any breakfast or brunch spread! Check out this low fat and vegetarian friendly quiche recipe below!
Ingredients
4 eggs
1/3 bag fresh spinach
1/4 cup chopped onion
2/3 cup 2% shredded cheddar jack cheese
1/3 cup low fat or fat free feta cheese
2 tbsp margarine
Sea salt and pepper to taste
Saute onions in margarine until translucent, then add spinach and cook until wilted. In a separate bowl mix four eggs very well then add spinach, cheddar jack and feta cheese and salt and pepper to taste. Stir ingredients until mixed very well. Pour mixture into a small greased (with margarine or cooking spray) glass pie or casserole baking dish. Put in the oven at 375 degrees for about 30 minutes. You’ll know it’s done when the middle sets. Once done let it cool, cut it and serve it up!
