Even though the weather shows differently, the colder days are ahead and winter is the perfect season to try out some simple soup recipes. Soups can be prepared on the stove top or in a crock pot. We’ve got two simple recipes that we’re sure will become seasonal staples for years to come. Check out these easy soup recipes below!
Hearty Vegetable Noodle Soup
Ingredients:
1 1/2 cans of vegetable broth
1 cup frozen spinach
1/2 cup frozen corn
1 cup of frozen green beans
1 large russet potato
Egg noodles
2 cups of water
Sea salt, pepper and garlic powder to taste
Peel and dice the potato and add it to a pot of water (1 cup) with part vegetable broth, bring to a boil. Lower heat and add the remainder of the broth, corn, green beans and seasonings. Cook covered for 20 to 25 minutes, or until potatoes are tender. Add noodles and another cup of water, seasoning to taste. Cook covered 10 to 15 minutes, or until noodles are cooked through. Serve in a bowl.
Chunky Tomato Soup
Ingredients:
1 can crushed tomatoes
1 can diced tomatoes
1/4 cup low fat cream
1/2 cup vegetable broth
Sea salt and pepper to taste
Shredded asiago cheese for topping
Combine crushed tomatoes and diced tomatoes in pot and bring to a boil. Reduce heat and add cream, vegetable broth (or water) and salt and pepper to taste. Simmer for 15 to 20 minutes. Serve in a bowl topped with asiago cheese and served with toasty, buttered bread.
