This will be one of the easiest, fulfilling yet healthy sandwiches you’ll cook! This recipe is inspired by the Portobello Cheesesteak recipe found in the Vegan Junk Food cookbook by Lane Gold, with a few changes. Below you’ll find the recipe and directions. Ingredients:
About 1-1 1/2 cups sliced baby portobello mushrooms
1/2 large red bell pepper, sliced in strips
1/2 yellow bell pepper, sliced in strips
1/2 yellow onion, sliced
2-4 tbs olive oil
Roma tomato, sliced
Shredded Italian blend cheese
Whole wheat bun
In a skillet, heat oil and saute mushrooms. Let cook for about 8 to 10 minutes then toss in peppers and onion.
Saute all ingredients until onions become translucent and veggies slightly brown. Remove from heat and put veggies on a wheat bun and cover with cheese. Stick under the broiler until cheese melts.
Add tomato slices, plate and enjoy with Pop chips are another light side!
