With summer right around the corner and many of our favorite fruits and vegetables coming back in season, we thought we’d share the benefits of five of our faves.
Asparagus
A good source of fiber and packed with vitamins A, C, E and K, asparagus is a great veggie to make as a side or mix into salads all season long! Throw them on the grill with onions and peppers or roast them. These crisp green veggies are sure to become a summer staple.
Peaches
This low calorie fruit is packed with tons of benefits. They’re high in potassium and niacin and aids in regulating blood pressure and boosting energy. Definitely a great substitute for a high calorie dessert.
Corn
A summer grilling staple, this bright vegetable packs a good dose of fiber and contains lutein and zeaxanthin which promote healthy vision. Just remember to keep the toppings and condiments sparse and enjoy an ear straight off the grill.
Strawberries
Great alone or in smoothies, strawberries help lower the risk of heart attacks and are high in vitamins B and C. Slice them up and toss in a fruit salad or as a topping for leafy green walnut salads.
Watermelon
A summer must, this refreshing sweet fruit is packed with lycopene and beta carotene. Watermelon also helps lower the risk of heart disease and blood pleasure.
