This is probably one of the simplest dishes to make! You can use any type of chicken substitute or actual chicken for this recipe. Quorn Chik’n Tenders are used in this recipe. Ingredients:
Servings| 2
1/2 cup Quorn Chik’n tenders, chicken or other substitute
1/2 red bell pepper, sliced
1/4 onion, sliced
1 cup wild rice
4-6 tbsp olive oil
Sea salt and pepper to taste
Cook the wild rice according to the package using about 1-2 tablespoons of olive oil and sea salt to taste. In a pan, saute onions and peppers in 1 tablespoon of olive oil until onions are translucent and slightly browned. Add Chik’n Tenders, remaining olive oil and sea salt and pepper to taste. Simmer covered for 10-12 minutes. Plate the rice and top with the Chik’n and veggies and enjoy!
