This recipe is quick, fulfilling and oh so good! If you’re a meat eater, trust me, you won’t miss it in these quesadillas. This recipe is very versatile, so feel free to substitute or add other veggies. Check out the easy recipe below!
Ingredients:
Servings- 2
4 Wheat Tortillas
1 can black beans
3-4 roma tomatoes, diced
1/2 small yellow onion, chopped
1 cup yellow corn, fresh or frozen (if frozen, no need to thaw)
1/2 packet ChiChi’s taco seasoning, or favorite taco seasoning
1 tsp chopped garlic
salt, pepper to taste
shredded cheese (used finely shredded sharp cheddar)
plain Greek yogurt
In a bowl mix all of the ingredients, except the cheese and yogurt. In a pan over medium to low heat, add 1/2 teaspoon olive oil. Place a tortilla over oil and add a thin layer of cheese on entire shell. Once cheese has slightly melted, on one side spoon an even amount of the bean mix making sure not to overfill. Add a little cheese over bean mixture, fold other half of shell over and press with spatula for 30 seconds. Be sure to only fold over once shell is brown on the bottom. Remove from heat and repeat for remaining shells.
Preheat oven to 450 and lay quesadillas on a baking sheet. Place on top rack and bake for 2-5 minutes or until desired crispiness. Remove and plate with a small dollop of yogurt!
