With warmer weather approaching my body is starting to crave lighter dishes! While this is still a pasta dish, it’s a little on the lighter side but still pretty savory. Check out this vegetarian-friendly stuffed shell recipe below!
Ingredients:
1/2 box large shells12oz ricotta cheese
1 cup cherry tomatoes, halved
1-1 1/2 cup fresh spinach
1 tbsp chopped garlic
salt & pepper to taste
olive oil
Parmesan cheese
Cook shells according to directions, drain and let cool. In a separate bowl mix ricotta cheese, spinach and garlic, seasoning to taste. In a baking dish lightly drizzle olive oil. Stuff shells with ricotta mixture and arrange in dish. Spread tomatoes over shells and drizzle olive oil on top. Bake in oven on 375 degrees for 15-20 minutes or until slightly golden. During the last five minutes sprinkle with Parmesan cheese and bake until melted. Plate, top with more Parmesan if you so desire and enjoy!
